Creme Diplomat

A basic dessert filling for pastries and baked goods.

Instructions

  1. Seperate egg yolks and mix in a pan with the sugar, starch and vanilla.
  2. Add in a splash of milk and begin to beat until there is a thick paste.
  3. Add in the rest of milk and begin to whisk while heating until a boil.
  4. It will suddenly thicken, let heat for a bit longer.
  5. Turn off heat and add in the butter. Let chill down to room temperature.
  6. Mix with equal parts of whipped creme and mix together.
